In Season Now: Scapes

Garlic scapes are the shoots or stems and flowers of "hard neck" garlic plants. Farmers traditionally cut them off the plants so that growing energy is concentrated in the bulbs. In this way they're a kind of sneak preview of the season's crop. They have slightly more chive-like flavour, and can be used as a substitute for cloves or as one might use a ramp or even a scallion. Kathleen Mackintosh, who just received the season's first scapes from Perth County garlic producer August Harvest, uses hers to make pesto. She simply whizzes the stocks up with Monforte's Toscano cheese and oil to use on pasta, or as a gremolata-like sauce for grilled meats. | Culinarium, Ontario's Locavore Store, sponsors GFR's weekly seasonal produce report.
